Antioxidants for reduced risk of chronic diseases
Researchers have identified 73 different connections in cucumbers that offer antioxidant and anti-inflammatory benefits.
These include flavonoids such as fisetin (associated with reduced risk of cancer) luteolin and quercetin.
They contain cancer lignans, usually associated with cruciferous vegetables.
Why is this important?
Chronic inflammation and oxidative stress are associated with many chronic diseases, including heart disease and certain cancers.
By consuming a plant-based diet that counteracts this activity, you lower your risk of being the main killer of men and women today, cardiovascular disease, and significantly lower your risk of cancer.
Blood sugar regulation
Although it is still at an early stage, research into cucumbers for the regulation of blood sugar levels is promising.
People with type 2 diabetes may experience excessive formation of reactive molecules in certain cells that adversely affect blood sugar levels.

Researchers have also found that the phytonutrients called curcubitacins A, B, C, D and E in cucumbers inhibit the development of cancer cells and the survival of cancer cells.

People with elevated cholesterol levels can also benefit from cucumber juice.

Cucumber seeds contain various phytonutrients, including carotenoids and flavonoids. In a study in people with slightly elevated blood fats, experienced consumption of dried cucumber seed extract over a period of 6 weeks lowered total cholesterol, lower LDL, lower triglycerides and increased HDL.
The amount of dried cucumber seeds that they consumed every day was about the same as what you would eat in a cup of fresh cucumber. So make sure and press those seeds!
Cucumber juice mixes
